This thread is provided to you so that you may share your opinions on what anime is actually worth watching, and what anime really isn't.
I'd recommend:
Death Note - For people who like more mature and intelligent TV. Dark and serious, but not without humour.
Fullmetal Alchemist - Epic story with heart, set in an early 1900's era Europe inspired steampunk fantasy world, which can go from overly childish comedy to full on tragedy in a second.
Cowboy Bebop - It's Cowboy Bebop.

I've said many times before..Hellsing and MPD-Psycho, because all the rest is shit.(Except Cowboy Bebop)
Edit: Also, Fist of the North Star and its old-school goodness.

Gurren Lagann - mech anime. I seriously can't recommend this enough. Just watch the first episode and you'll be hooked. Ongoing I believe...
Wolf's Rain - Another great show. Great art and action. 30 eps complete
Claymore- Kindof brainless violence but that's a % of any good anime depending who you talk to. I really enjoyed it. 26 eps complete

One anime that tends to get easily overlooked is Dead Leaves. Maybe with reason, as the action is extremely high paced, the story is non-existent and the style doesn't really look like anime. At least it's unique. And cool.
What I can't understand though, is how FLCL have gotten way more recognition than DL. I'm not saying FLCL is bad, because it isn't, but they have a lot of similarities.
Still, if you're looking for something different, check out Dead Leaves, and prepare to get flabbergasted.

Shugo Chara!: ok, I have to admit I'm addicted to this. Then again, I am female so girly animes are kind of...common in my collection. I just find that it has an interesting storyline that keeps me watching episode to episode to know what happens.
Ninin ga Shinobuden: I'm just kind of stunned that theres a character named Kaede and she looks like the IRL me. Crazy off the wall-type storyline, I never know what to expect next.
Rosario + Vampire: I've only seen a few episodes of this so far, but I find it interesting to say the least.

Scrapped Princess and Spriggan have been on my list of series to watch for probably years now but I never seem to get around to watching them. I should probably move them up the list a little. Especially Spriggan, it's only a short movie, I can sit through a short movie.

I got the movie from work when we cleared out our anime section. It doesn't explain a lot at first, but it has some really interesting theology in it. It was just so different. Kinda like Akira.
